So I'm just wondering about estimating cooking times for briskets. I realize there are different way to cook it aka low and slow or hot and fast so timing will be different. I have a 15 lb packer that I'd like to get done in 12-15 hours. I'm thinking the standard 225 degrees wouldn't get me there in that time. Am I correct? Would I need to be closer to 250 or even 275? What are guys here working with temp and time wise? Thanks nick.

If you want to take 12 -15 hours, shoot for temperatures around 250F, maybe running between 235F and 255F, you will end up in the time range. I tend to cook around 275F up, even to 300F, and my cooks typically run 8-9 hours with at least one hour at the start running at 225F. Soooo, that is what I do.
