Smoked ribs and beans with PRON

Starting to figure out the Brinkmann with the mods that make it awesome. Made up a nice rub with plenty of turbinado sugar and some kosher salt and paprika.
Four hours smoking with the dutch oven full of beans, onions, peppers and spices tucked into the water pan on an inch of sand to keep it from burning on the bottom.
Fuel was Woodstock lump charcoal with some apple wood chips for sweet smoke during the first two hours.
Ribs were inhaled by the family and neighbors!

That's a Fine Lookin Meal! Gonna have to try some beans like that! Sounds like a great idea.

I love to do beans in my Offset when I do Ribs.
I put the D.O. on a steel plate, on the grate, just over the tuning plates.

NOTE: I added what I thought was going to be a warming plate on top of my fire box, but the temps are better suited for cooking.

(My D.O.s don't get as smokey and greasy when I use the firebox plate.)

I studied Cow Girl's blog photo of her firebox plate, and shamelessly copied it. Works great. Come to think of it, I 'borrowed' her idea for cooking on a truck tire rim. I made a grill grate I use at our hunting lease, or at home across a backyard fire pit. Thanks CG.
