Cornish Hen On Smoker Question
Anyone have a good recipe for smoking Cornish Hens? Also, at what temp do you smoke? I don't want the skin to have a rubber texture when I am finished. I plan on using a Brinkmann Cimmaron to do the cook.

http://www.bbq-brethren.com/forum/sh...hlight=cornish To me (to keep it simple), they are just little chickens. So, I brine them, season them, and cook them the same way I would a portion of chicken the same size. No need to change what you do now for a similar sized hunk of chicken. Good Eats! TIM
