I am looking for a good chicken salad recipe. I saw a sandwich on DDD last night and now I want an awesome chicken salad sandwich. Bought 2 chickens to go on the Egg tomorrow so help me out - what do you put in your chicken salad???

Spicy chicken salad

Made with avocado, cilantron, diced peppers and dijon mustard

Ingredients

  • 2 cups shredded chicken
  • 1 jalapeno, finely chopped
  • 1 red onion, finely chopped
  • 1 red pepper, chopped
  • 2 scallions, thinly sliced
  • 1 avocado, peeled and diced
  • 1/2 cup chopped cilantro
Dressing:

  • 3 tablespoons lime juice

  • tablespoon mayonnaise
  • Splash of tabasco
  • Salt

  • 1/2 cup olive oil
Directions

Combine all ingredients in large bowl. In a small bowl, stir together lime juice, mustard, mayonnaise, tabasco and salt and pepper. Slowly drizzle in olive oil while constantly stirring with fork. Pour dressing over chicken mixture in large bowl and toss to combine. Serve over greens or as a sandwich

No I didn't - it wasn't one of the featured sandwiches, just a quick shot - but it got me hankering for some chicken salad...

Have you tried Costco's rotisserie Chicken salad? Not bad, but we can all improve on that.
 
Can't remember where I got this recipe but it is pretty good.

2 1/2 to 3 cups diced cooked chicken
1/2 cup diced celery
3 to 4 tablespoons finely chopped purple onion
1/4 to 1/2 cup mayonnaise, or more, to taste
2 teaspoons lemon juice
Dash pepper
2 to 3 teaspoons sweet pepper relish, or to taste
dash Cajun or Creole seasoning blend, optional
Salt to taste

Preparation:
Combine chicken with celery, onion, 1/4 cup mayonnaise, lemon juice, pepper, relish, seasoning, and salt. Add more mayonnaise, as needed.
Makes 6 to 8 sandwiches, depending on size.
 
Smoked chicken, finely diced celery & onion, mayo. On a nice fresh roll topped with some bacon and a slice of cheese melted under the broiler for a few seconds.
 
Smoked chicken, chopped onion, small jar of Dill pickle relish, half n half mayo and sour cream, some dijon mustard and a few dashes of hot sauce, salt to taste. Sorry for no measurements but I always just make by eye and feel.
 
A bit old school... like my Mom's and a touch of q.

chicken, miracle whip, sweet pickle relish, jalepeno peppers, onions, celery, season with a dab of Plowboy's Yardbird (behind each ear)!

Awesome. That is pretty healthy too, using only 1 tbsp of mayo. Thanks.

Yeah, it ain't too bad for ya.

I love making tortilla wraps with this stuff. It's one of them recipes that tastes better the next day.

Also, my advice is to break out the food processor so you can get the onions and peppers into real small pieces.
