When almost ready to pull the brisket I browned some bacon, sautéed onions, green chilies, garlic and tomatoes in the bacon drippings. Then added cooked pintos, seasoned with salt pepper and cayenne and placed the skillet in the drum to catch some smoke too.



The drum stayed at 275F for the whole cook. I didn't take the IT of the brisket, just pulled it when it was probe tender.
Then let it set while getting other things ready.



Had to have a taste!





Drizzled the sammich with some Billy Sims Boot Kickin sauce...





I really like the BPS "Money" rub. Hope to give it a try on some other things soon.

Pork chops? Jallelujah bacon rub with Happy Endings.

Brisket for my run at Wampus' brisket chili? Jallelujah Bacon Rub with Money Rub.

Porterhouse Steak? Jallelujah Bacon rub, Money Rub, and Happy Endings. CANNOT go wrong.
