As we near Christmas and people making lists of gifts they want, I thought it might be fun to make an Ultimate BBQ wish list. One to get ideas of what to ask for and two to give others on the list ideas of things that would be cool to have or maybe help a lot in cooking and preparing BBQ.

So on my list:
silicon gloves for hot meat handling
thermapen (Black of course. it's the fastest)
WMS
EZ up (even for at home because it can protect the cooker from rain)
bear claws
turkey forks (these type of things - http://www.cookingenthusiast.com/stainless-steel-turkey-forks---set-of-2/p/W6458070/)
BBQ sauce from your favorite maker
Rub
Dr. BBQ's Big time barbecue cookbook

Add to the list

I ordered my Christmas present a couple of days ago. I bought the ceramic oval stone, foil ring, and a stainless steel grid (to replace the porcelain grid that came with my BGE) from the Ceramic Grill Store. I think I have everything Tom makes at the Ceramic Grill Store now.

There's already been a thread or two about this, but its always fun.

I've already gotten a prep table (had a party and really needed one so I got it early)

I've asked for countless rubs
Myron Mixons cookbook
Silicone gloves

Honestly I asked for about 20 different rubs so that's taking most of my list

My wish list (which wont happen this Christmas) will be:

2 tickets (for my partner-in-crime and I) to go to Myron's class.

If you get yourself some good silicon gloves, you won't need bear clows or turkey forks. I have both and never use them.

All the equipment necessary to do the curing, drying, and smoking of fish and meat. I want to make bacon and smoked salmon, etc. What all would that take?

Going to see Jamie Geer tomorrow to pick mine up. Jambo backyard so I don't have to drag the J3 out every time I want to cook.

Whoa.. Tall order there. Lol

There are lots of ways to do all of the above. Each method has its own requirements.

Fish you want to be able to cold smoke.
With your bubba keg you can do most any meat smoking you need.

Curing requires fridge space for wet cures, and brines.
Air curing requires a humidity and temperature controlled chamber (a small wine fridge works well).

My first suggestion however is to ask Santa for Michael Ruhlman and Brian Polclyn's (sp?) fantastic book:
