Default Well, I was gonna do Bill's 3-2-1 on a fattie but

I sprinkled on Head Country Seasoning on a 1 lb JD Hot and it was in the smoke for 3 hrs around 12:30 PM MT today when I decided to take a small sample taste test,,,,,and now we have BigAL's 3-2-1 fattie.....
3 hrs in smoke..
2 min taste test...
1 lb gone....

I ate the whole Damn thing with out stopping Good Stuff. Me and Head Country are going on the road ....

10 lb Brisket, full pot of Beans, rack of BBR above a full cast iron pot of beans above heat sheild going since 9 am with smoke fron Tim's FL Oak how better can a Monday get unless you gots a job! :D

Brisket was in frig for 24 hrs with www.TexasBBQRub.com applied over Worcestershire Sauce... Ribs same except Honey before dry rub applied.

Should be good some time tonight

Brothers, it was Head Country Seasoning......on the fattie.... and I, you are not gonna believe this....... I have entered another zone on those BBR....9 hrs in the smoke above the beans both above the heat sheild...... I was gonna foil em....but I,,,,,,,again chose to taste'em.....ate 3/4 of the rack and put the other 1/4 into the beans..... no foil, no sauce,,,no pics,,,, just hard to describe..... except by :D :D :D :D :D :D :D :D :D :D :D :D :D :D :D

Brisket at 175, fat cap down, 11.5 hrs tems all day at 215, gotta love it, refiled at 9 hrs

He called me from fatty heaven.

like 5 brands and 20 varietys

He could only get 12oz fatties at home.

He is in a Baltimore supermarket.

I goes through the 20 items or less line and I hear "I got more than 20 items, is that okay"

He told me he couldnt wait long enough to do 3 in the smoke, 2 sprayed and wrapped, and 1 in the cooler, so I told him to throw 10 on at once. He's gotta beable to get one of them into the 3-2-1
