How's that diffuser working for you?
 
looks great. just wondering if youve taken temp readings from sides and middle with the defusser cause im having problems with middle hi heat sides lo heat and wondering if thats what i need to make b4 i make it.(always lookin for a shortcut:becky:) im gonna use old pizza pans but dunno if i should try a 12" first or a 16"? just wondering, thanks

Regarding the temps, I have not checked just because everything seems pretty evenly cooked. The diffuser I have is a pizza pan.

My thought was to knock down the heat but still let it come through.

I will check on the next cook.
