Since it was Memphis in May this past weekend I figured it was a good excuse to whip up some dry rub ribs and have an entry for the throwdown. Good thing I had a few racks in the freezer.

I don't know where my wife found these but they were tiny. I'd say around 2lbs each. Seasoned up with some kosher salt and a low salt memphis rub that is is heavily influenced by Pitmaster T's butt glitter.


Today it was the KBQ turn in the roster. Cooking over local orchard wood, mainly cherry. Gotta love that inverted flame on the KBQ!


Sprayed them down ever 15-20 minutes with a vinegar, water, rub mixture.

Once they passed the bend test, which was about an hour running around 300F, it was time for one more spritz and a final coating of rub.
