Here ya go:

-simmer onion,habanero and garlic in olive oil
-add a fair amount of masala
-water to make more sauce and a small can of tomato paste
-Maggi cube (or doctor it up with salty spices)
-add chopped tomato and parsley or celery leaves
-if the sauce is too thin add a binder,I use cornflower

Check my Roti Pie thread out for pics of the ingredients.

Question for you, what do you mean by Masala? I see a yellowing tint making me think it is not just your standard Garam Masala, but a more custom blend that would be called Masala, but is as varied as what Americans call BBQ Rub. Just curious, maybe the answer is more simple than I realize. Only asking because I love, love, love flavors from southeast Asia!
