I started using Reynolds Hot Bags this past summer. It makes crutch work a snap. Just open bag, insert ribs, add juice mixture (if you so desire), seal, and place back in smoker. The best part is you don't have to worry about spilling all that wonderful rib juice, which is prone to happen when you use just foil.

The bags are not large enough for full slabs, but plenty large enough for ones you buy at the local grocery store, or if you cut your slabs in half.

I've foiled, had good results, I've not foiled and had good results....if I foil now, its only to speed things up a bit.

If you are catering, FOIL IS A NECESSITY! Foil is needed for:

1) Storing finished cuts of meat in a cooler. try putting 20 butts in a cooler to hold without foil?

2) Capturing meat juices for pouring back over sliced/pulled meat to keep moist and flavorful.

3) Coaxing stubborn cuts to done-ness so that all meat is done at the same time. Just try and get 20 briskets and 20 butts done at the same time without it.

Anyone who says foil is not a VERY useful tool is blowing smoke up yer arse! I start every cook by pulling 2-24" sheets of foil for every cut (3 racks of ribs=1 "cut") of meat I am cooking.
