Default Heres how its done!!! The Rack Attack

Here was the menu for fight night tonight... Matt Huges whopped Royce Gracie and with this sandwich in front of us, and a pile of ABTs, no one cared.


Start with a loaf of Italian bread, lightly buttered and covered with some Garlic powder(thanks Brama) and some chopped garlic.



Lightly toast the bread and Sauté some onions. Mix a little beer and bbq sauce with the onions when they are done.




add a layer of bacon and mozzarella cheese on top of one side of the toasted bread and spread the onions on the other side.



add some BBQ Sauce to the cheese and onions and throw some sliced poblano peppers(and of course more cheese) on top of the onions.
luckily, i had some bacon left over from snackin.. :)




return to pit(or broiler) to melt the cheese and heat the onions.



While cheese melts, remove the bones from a rack of baby backs. Score along the bones where the membrane was to help remove the bones cleanly. You should have a full rack with no bones, but still one whole piece of meat.




place ribs on melted cheese, sprinkle a little more cheese on both sides and melt it down, then drizzle a little more BBQ sauce on both sides.




Heres the biggest baddest babyback sandwich you ever had... Put top of sandwich to bottom and CHOW DOWN!!!


Slice it up and call some friends.... or don't.

Now there's a sandwich that would make Dagwood blush with embarassment!! Great lookin' eats Phil, and inspirational too. I'm thinking about trying something like that with slabs of pork loin sliced length wise, I'm hungry, I'm ready for fatty and a biscuit with a V-8.
