Default Brisket sell by date

Since I don't know the pack date on a brisket, what is the concensus on keeping a brisket 1 week past the sell by date on a Costco brisket.

Sell by date is set by store policy and basically useless. You're probably fine to go a week or even two, but I wouldn't go much longer than that without knowing the pack date.
