Sounds like a good cheese, but what makes it squeeky?

Processed Cheese Sticks
At Albertsons, United etc you can find the sticks marked squeaky cheese. The texture (I think it's mozzarella) "squeaks" against your teeth as you bite it.
It's not fingernails down a chalkboard squeaky, but it's a quite noticeable texture However, If you can find a cow or goat dairy to obtain the fresh squeaky cheese curds it's quite a treat. Mild flavor, salty and really squeaks and different from the processed shrink wrapped at the grocery store

Here in Wisconsin the fresh curds are squeaky as well. If they don't squeak, they are not fresh. I have not tried the Juusta cheese mentioned, but have a friend who fries cheese as an appetizer when we visit sometimes. It looks very similar to what the OP is showing and is slightly browned on both sides. It is very delicious.
