I haven't done many beef short ribs, but as I understand it you want short ribs from the plate--not chuck? Is that correct? Does that mean chuck short ribs aren't worth the trouble, or just that plate is preferable if you can get it? Thanks.

Both are great in my opinion. I usually get chuck plate cause that is what is available. The 123A or 3 bone from behind the chuck are a little meatier and fattier and usually more expensive. Get what is available and enjoy.

In my opinion there is nothing wrong with good back ribs, as long as they are left with some meat on them. Even so, it will still take considerably more of them to make a meal, but when found cheap enough they are still tasty to cook.
