Well she is done.... well done enough for now.
I was planning on a couple of fatties only. After much groaning, I ran out last night and bought a cryo of spares for the family too.
Trimmed em up, rubbed em down threw back in the fridge last night.
The fatties and 2 racks have been on the smoker for around one hour now. Smoker smells great and is cruising around 235.
As I have never done fatties before, what temp do I want to pull themm off at?
Going to try and follow 4-1-1 for the spares but judge on the bend test.
I will do my best to provide a some pron when the food comes off.
