Sunday cook Spare ribs, pork loins, fatties (pron)
pork loins rubbed with McCormicks pork rub
spare ribs rubbed with Cajun Blackening rub ingredients for the fatties This one was the best fattie that I've done so far- filled with hot tomales mmmm good! I'll definately be doing this one again. Smoked using B&B lump charcoal & pecan wood chunks. 3 hrs for the fatties & loins, 5 hrs for the ribs The bacon wraped fattie was filled with boudin/mozzarella cheese & used chipolte sausage. The tamale filled & other boudin/mozzarella cheese filled used maple sausage. The cheese helped hold the boudin together after using the press. Last hour for ribs I glazed with Daddy's Lip Smakin' Sweet BBQ sauce (from the Brethren recipe list) tamale fattie & pork loin the chipolte sausage & boudin fattie
