Actually had you and Marsha in mind when i posted it. I stumbled onto it a couple years ago. Been a valuable catering tool.

No problem, and Thanks. I grew up on a working farm, so my memories of cutting carcasses are pretty vivid! Must have been 8 when dad let me watch him shoot a beef. Can see it take it's last breath like it was yesterday! Gives me an appreciateion for what I'm eating. I bottle fed a calf named Herman because his mother wouldn't suckle twins. We ate him too.
