I have an order in with family for bear and some other exotics for the 2009 hunting season, but as yet I've not had bear in my hands, so I'll be keeping an eye on this thread to see what ideas folks come up with.
Though I've been offered haunch instead of shoulder if he gets a tag and a kill.

I have never cooked a bear shoulder but have cooked a lot of bear meat. Probably use some Yardbird rub and do a low and slow smoke. Bear has a lot of fat and it is not the best tasting grease. In other words don't smoke it in a pan. Let the fat get away from the meat.
