If you ever want to run hot (liked for grilled pizza) I doubt that any of these air intake approaches will suffice. Well, maybe if you use 4, 2-inch openings. But you'd probably spend $100in ball valves. That's why I did this.

I have one 5/8" and one 3/4" hole in a slider configuration (the holes are 1.5" apart).
Those holes remain wide open at first. For the rest of the cook, both holes are closed down to b/w 1/4 - 3/4 of their full size. I am still amazed at how little open hole area you need to run a UDS. My original plan was to put another 3/4" hole on the opposite side. I might still need to do that to if I want to get well above 300°, but there's no need yet as it runs anywhere I choose between 225° and 280°. Last edited by Tulse; 08-20-2012 at 06:14 PM.. |

Why don't everybody use gate valves insted they are less than 1/2 the price of a ball valve and do the same thing. 1 turn equals 1/4. 2 turns equal 1/2 & so on. The 3/4in valve cost about 8$

I really think it's a matter of preference. 4 nipples are really good for flow, however one BIG hole puts it all in one spot and is easier to control just my $.02. But then again I'm an A## Man.

I can't speak for others but I use a ball valve because I can be 20 feet away and see how it's set. It just works for me.
