I have been grilling those for a few years now In the markets Ralphs Albertsons and Vons they were called Pork Tri Tips. In the Mexican Mkts they are called pork cushion meat. Don't know where they come from on the pig but they are tasty

Just bought some pork cushion meat. I assume I cook it the same way I'd cook a shoulder?

That ring knife is called a Whizard knife. Very common in a packing plant. You wouldn't think it was too cool if you had to use one 9 hrs a day.
