Got a off beat question, anyone know a decent place to get some wusthof knives from? in iowa city we don't have any place that i can find. so guess i will haveta order online. looking for a decent set ( not kitchen block) i messed up our next comp in independence iowa as i signed up for a month of culinary classes at the community college. thinking of doing a 2yr culinary and have even considered Le Cordon Blue. i am always looking for new recipes and such and love to cook not just BBQ. but i know i can google Wustof but for the price i want to know i am not getting ripped off and such. so if anyone has got any wutsof/henkley/shun knives online please chime in.

Just curious if these will be 'workhorse' knives or your at-home personal collection....If these are your use them all the time, crank it out knives, I suggest that you look at the Forschners with the Fibrox handles (Link to America's Test Kitchen-- scroll down on that page for their suggestions). They are inexpensive, fine quality knives that get used in lots of restaurant kitchens rather than some of the 'bigger name' knives, some of which are obviously very well made......

Keep an eye on E-Bay. You can get some good deals if you keep a watch. I bought a couple Wusthof's out of New York for about a third of the regular cost.

There are definitely people around here that know lots about knives, but for those that are still learning-- here's a good piece from Cooking for Engineers about choosing knives....
Interesting Bites ![]() Kitchen Knives - what to buy? from Equipment & Gearby Michael Chu This article about kitchen knives has been published with the permission of its author Michael Chu and is a feature article from Michael's web site Cooking For Engineers - www.cookingforengineers.com. "Basically, I started the site as a place to store all the food related stuff that I didn't want to have to carry around in my brain, but I would want to reference later. Sometimes people ask me (or quiz me) about cooking and there's a tendency for me to smile and respond with, 'I wrote it down so I wouldn't have to remember!'" ~ Michael ChuThe knives in your kitchen come in all sizes and shapes. Some are for dining, chopping, slicing, carving, and tearing. But which knives are made for what purpose and which are essential to have in your kitchen? ![]() ![]() In this article, I'll look at some popular kitchen knives and discuss what each type of knife is designed for (and some unconventional uses for them). Chinese Cleaver (Asian Cleaver)
Chef's Knife
Santoku
Paring Knife
Carving Knife (Slicing Knife)
Bread Knife
Utility Knife
Boning Knife (Fillet Knife)
Meat Cleaver
Steak Knife (Dining Knife) What to look for in kitchen knives? Here's a short list of stuff people usually tell you to look for:
How about buying a kitchen knife set? It depends. Most of the time kitchen knife sets come with one or two good knives and the rest are not so good (that's why they put it in a set). Often you're better off buying the knives individually and as you need them instead of all at one time. Just a thought here.
If I was going to spend that much money on knives I would want to know what they feel like in my hand. I have always bought my knives one at a time though and not as a set. I go to a store that sells them and ask to see them. I hold them like I would be when using it and make the motions too. Might look kinda weird to other customers but the person who is showing me the knives usually comments that I must really appreciate knives. There is no right or wrong in which handle design you buy. I like the classic handles. They just fit my hand better than the others. Try the other handle styles too. You might like a different one. Kind of like trying on shoes. You want it to feel comfortable when you are using it. If it doesn't feel comfortable you won't use it. Quote:
I have a 9 inch chefs and a 6 inch too. I use the 6 inch for everything except where I need the reach of the 9 and that's pretty rare to be honest. I tend to like a shorter knife because I feel more in control and you can be more precise. I have 2 Wustof boning knives. 4 inch and 5 inch. I use both equally for different purposes. The 4 inch is really good at boning poultry because I can really "feel" where the joint is. The 5 inch gets used for most everything else. Once I figure out what I want, I usually go home and make my purchase on the net. I usually start looking at the website that I gave you before. But of course, this is just my opinion. I just thought that if you are going to be buying a "lifetime" set that you might give some thought to these things before the purchase.

http://www.cutleryandmore.com/classic.htm I will recomend them too.
I would not buy there but to get a feel, you can go to a Bed Bath and Beyond. I have had Wusthof or quite a while and with good sharpening and edge care you will be using shape knive for years. Other brands to look at for pro chefs knives. Global, Misono & MAC. Great for the fine 2mm french slicing. Misono would probably be the best.

i have held wustof henckels and shun, i like wustof ( which i currently own a chef's) the shun has a round handle which i seemed a little off but the salesman at the time said it is weird at first bu really makes a difference in a long session of cutting as it is easier to hold. and shun felt like beyond light weight. and yes i understand anything must feel good in my hand then the rest needs to be decided but so many "Types" and "Brands" but this thread really has good points to it not just for myself but others who might think of knives.
