Brisket and bacon breakfast burritos with too many pictures

Had this prime brisket point in the freezer that was begging to be sandwich meat...
But sandwich meat it was not to be...

Trimmed and ready...




Seasoned and onto the lil 14" WSM with some olive wood for smoke...
The trimmings were cooked to keep me from starving along the way...




Around 4 hours in the smoke it looked like this and was near 190 degrees IT...




Rested, chilled, and sliced thin...
Yeah it would have made some great sandwich meat...




Then I chopped it up a bit and quick fried it to render a bit more fat and to give a bit more flavor...




Cooked some bacon in the beef drippings...




And fried some taters in the bacon drippings...




Flour shells got treated with brisket, bacon,taters,tomatoes, onion, and fermented Jalapenos...Oh yeah...Scrambled eggs...




Rolled and ready for the reheat on the grill...




And ready to fill my belly...





The fermented peppers added a bit of heat to the dish...
Served with a bit of fermented Serrano sauce (not pictured) it was a huge hit...

Love the idea of the fermented serrano pepper sauce.

They look delicious! Nicely done!! I will definitely keep this in mind for future leftover brisket!
 
I think it is safe to say we would all hit that at anytime.
 
Dang, and it's breakfast time right now. Unfortunately, I don't have a brisket that's ready. Awesome cook!!
