Wow, I will replenished my ground chilie's (Hot Cayenne, Habanero, New Mexico Lumbre, and Aji Amarillo), these control the heat and flavor I desire. Yes the heat is important, but so is the flavor.

I look forward to placing my next order with Oakridge in the near future.

Just placed my order for for spices in the next culinary class I teach this month.

For those who may not know, the extra fine raw cane sugar is used in fine baking, and easily completely dissolves in liquids, great when making limoncello. The extra fine raw sugar is also good for BBQ sauces and general cooking.

I really like the fine flake salt.

For those who are unfamiliar with flake salt, here is a history lesson.
Flake salt is a hard salt that somewhat resembles snowflakes.

According to legend, flake salt was first manufactured in Maldon by accident nearly 2,000 years ago, when the slaves of Casius Petrox overheated his bathwater taken from Maldon Lake. His slaves had inadvertently discovered a method of producing salt from sea water.

Still produced and hand-harvested in the same manner today to ensure the old world traditional salt with the distinctive flaky texture and taste that lends a certain piquancy to virtually any dish. Flake salts have dry, thin, parchment-fine brittle crystals that create bold, sparks of taste when eaten.

Typically used as a finishing salt, it provides a snap of texture and a brief explosion of pungency to fresh vegetables, green salads, or wherever a more vibrant, salty presence is desired. The flat hard flakes burst with the vibrancy of fireworks as they dissolve in your mouth. A little bit goes a long way, so you get bolder flavor with less salt.

For many years I have been using Maldon Salt Flakes, but the Oakridge fine salt flakes will replace the sea salt in our table pinch bowl.
