Default Smoked shredded duck?

Thinking about smoking duck legs until they shred down. Maybe carnitas for some tacos. Anyone do this? Search bar is not working for me to search forum. Thanks.

Never tried it, however...duck is good, smoke is good, tacos are good. Sounds like the perfect plan. Go for it and let us know how it turns out.

I smoke duck often, well, not as often as I would like ;). But not for tacos, I cook to med-rare (135ish). One thing I found is that you need to score the skin to let the fat out, esp for store bought duck. But once again that is for the whole thing..

try seperating the duck. You can cook the back 1/2 like you plan, but it would be a shame to cook the breast that much.

I saw this about doing whole ducks for shredded duck - but I am just going to do thighs I think should be bit more fat there and shred down better

i haven't smoked and shredded a duck yet, but i cooked one sous vide and then shredded it and served it over duck fat fries with duck gravy, almost a proper poutine.... I think it would be great smoked.

One of my favorite ways to prep domestic duck is smoked. I save the drippings and shred the meat for smoked duck and Andouille gumbo..

also fry the smoked duck skin for cracklins to top the gumbo....









Smoked, shredded duck is good stuff!
