Default lamb!

cooked up some more of our lamb today. it was a piece labelled "brisket" that actually turned out to be 2 pieces...

rubbed with a paste of kosher salt, garlic, onion, EVOO, and a little lemon juice, and let it get happy for an hour or so. then, on to the OTG over some RO lump with an apple branch until it probed tender

threw some taters on while it rested

then I fired up the CI skillet, tossed in some bacon grease, and started with some green garlic

and some pea pods

plated up with some onion jam

it was pretty tasty!
