Twice as good Carne Asada
It started as a great Carne Asada Easter dinner

Then to use the great food we had as leftovers, we added some more onion and a few fresh Asparagus from our garden (small but tasty!) to the sliced Carne Asada, onions, and mushrooms and on the grill in a cast iron skillet to get happy

Many times the flavors are much better the second day and the Mexican rice is testament to that. Add in some guacamole and sour cream not forgetting spicy salsa.

The night before, this was very good but I gotta say it was even better on day two. I’ll call it double down Carne Asada Meal
