Default Weber Hanging Rack

On Saturday I tried to use the Weber hanging rack (Expandable Smoking Rack, 7473) to hang some spares and emulate the Pit Barrel Cooker's results, but with a much greater cooking capacity. The experiment was a failure on numerous levels, most of which were 'user error'.

It seems that the rack is designed for use with sausage and fish, not spares or other large meats. I utilized the Cajun Bandit extender to get extra height, set up the rack itself and then tried to get the ribs on the hooks. The hooks would be great for linked sausage and fine for fish, but they were horrible for ribs. After stabbing myself twice (once didn't seem to be enough), I gave up on them and used the hooks that come with the Pit Barrel Cooker.

I had the rack in backwards, so it collapsed the first time I put the ribs on. I fixed that and got them going. Here's a photo of how they looked. Sorry that it didn't get the entire rack.



I removed the water pan, again to emulate the PBC. The temps were very hard to control and we seriously overcooked the ribs.

I'll have to experiment with this a few more times. If I can get the temps under control at about 275, I think this might work well and allow me to cook a lot of ribs simultaneously. I will, however, need to get more meat hooks from the PBC folks.
