Default good googly moogly

Well had my local butcher shop I do some business w/ order me a prime brisket, told them in the 10-12+ range thinking the 12+ might end up 14 but end up w/ an 18.5 pound monster . It's nice a square one w/ a thick flat & big knob of a point. I've never done one this large & not sure if it will even fit on my BDS at least not until it's cooked for a bit. No pics yet as I got it on my way in to work.

If it is to long drape it over a tomato can for a few hrs till it draws up a bit. By the time you give it a good trim it's gonna lose 2-4 lbs.

I use balls of foil, it will shrink and it prevents liquid from gathering as well.

You get that monster done

After quick glance over in cryo other than fat seam between point & flat don't see much trimming on this moozilla boobie

Ouch. I think the last brisket I did was choice, around 16 or 17 pounds, and I paid about $35 for it around the Super Bowl this year...

Around me the Super Duper Wally World or Sam's Select packers are $3-4+/lb w/ about 10-12lb being avg for a packer. You might be lucky & find a choice angus mixed in for same price (meaning someone screwed up somewhere - I won't tell if you won't). Most grocery stores around here sell the no roll type (somewhere between select/choice & not USDA stamped) for $6/lb for a flat trimmed to nothing but corned beef. The butcher I got this thru stocks USDA CAB choice for about $6/lb & SRF for about $10+/lb. The CAB are normally in the 10-12lb range w/ the SRF varying but close to same range.
