I also do London Broil marinated in Italian salad dressing, smoke and seared and then sliced wafer thin for sammies. You sure won't get to use your new toy much because they don't take long, we like them medium rare.

Maybe a nice large chuck roast?

well the wife brought home an Lb and a rump roast I'm going to do the rump i think.

My smoker is a smoke hollow propane not really a real smoker some have said but so far i'm getting hooked on this

well my last post/pic didn't turn out so well.
The wife didn't want me to use mustard to hold the mcormack monterey grill rub so I doused it with worcestershire souce. I cooked it at 225-250 for about 6 hours to an internal temp of 280 a bit more than I wanted but we do like our meat more on the well done side.
It sliced up nice and was very tender I'll do more of these in the future
