Default 12 hour low & slow on a kettle

Made an overnite cooker out of a rescue Weber.
The method uses a maze of wood & briquittes , with a heat shield between the fire & the food.

Fire bricks & pecan wood



Briquittes added & small fire started @ one end


Heat shield (20 in pizza pan) sitting on bricks & grate in normal position.

Rubbed butt on cooker



It was as good as it looks!

Cool idea on the setup, looks great! I may just have to try that with my kettle.
