A carcass is graded between the 12-13 rib in the ribeye section. The whole animal is graded prime.

how come I never see any other "prime" cuts like Chuck roast, flank steak, top round etc? All I ever see in Prime is Filet's, and other steaks.

I've never seen a Prime graded chuck, but, there are a few places out here selling Prime beef burgers, so I bet it is out there.

One of my special treats is going to my local Costco and getting some 1 1/2 inch Prime Sirloin steaks. They have wonderful marbling but are not overly fatty. The price is reasonable too.
