Been wanting to try that myself with a nice pork roast, your's looks amazing! Did you do any brining or just straight up?

Gala Apples - Cored.
Stuffing: Mix Honey, Brown Sugar, Clove & Cinnamon with dried cranberries (we used cranberry granola, cause its California )
Pour maple syrup on top, bake (or roast on smoker) for an hour.
