Sounds delicious, a good friend would make "johnny cakes" they were very good.
I always save the bacon grease, so I can add back small amounts when needed.
I Keep a small jar in the fridge also, for seasoning.

I love pancakes and bacon on an open fire. Yours looks great! Reminds me of our family camping trips when I was a kid. I just discovered Johnny Cakes when I moved here to Rhode Island and they're fast becoming a favorite of mine too.

My Mom's waffle recipe uses egg whites like that too. I was thinking the recipe I posted was more like her waffle recipe than pancakes.
