Nothing today, but this is the menu for Saturday's real break-in of Earl. Hosting an all day BBQ for friends, family, and few neighbors.

3 racks of untrimmed spares
12 lb Choice brisket
10 lbs Bacon wrapped boneless skinless stuffed thighs
10 lbs pork butt
Pig shots
MOINKS
Smoked mac & cheese
Stuffed fatty (breakfast before folks show)

Happy Phriday King Phu! KILLER thread from last year! Beef Extravaganza here this weekend. We pick up this year's steer from the butcher next weekend, so it's time to use up the rest of the last one. I'm hoping to brown and stock a ton of soup bones ( save some marrow for other treats like bleu cheese marrow butter), get a brisket and some other cuts corning for pastrami, MAYBE some sirloin jerky, and the last load of shorties. I think I also have a nice fatty slab left for pichana too, just to have something to snack on while all the slow stuff is in the works. We also have 100# of organic apples to can into various goodies and also hoping to make some tomato salsa verde with my late maters that didn't ripen. Gonna be busy, but well worth it; I love the blessings and bounty of fall harvest time!
