Bring a cooler and ICE (or some blue ice blocks). If you're judging the Invitational you will get chicken that came off of the cooker at about 11:45 but you won't get done with the sides until about 4:00. That's a long time for any meat, let alone poultry.

I remember taters and desert, what were the other 2 ancillary catagories?

Beans
Vegatable
Potatoes
Dessert

no sausage.
