Smoking some ribs on my ECB for the first time. got it going at 240 with some hickory. Really excited about themHere they are 1 1/2 into the smoke.

keep the Top hat on that ECB or you'll be in for a late dinner. "IF YA LOOKING YA AINT COOKIN" They are looking good.
 
Here they are. Right before I took them off. All done and sauced up. They were so damn tasty!

The color looks good but I don't see any pullback on the bones. How did you determine they were done? Did you think they were tender when you bit into them?
