Default rack of lamb, smoked chicken enchiladas >w/ pics

made dinner for some friends this evening, one couple wanted lamb, other couple wanted chicken enchiladas so i decided why not both

chicken ready to come off, rack of lamb and veggies going on





final products

smoked chicken enchiladas with a tomatillo hatch sauce and cilantro lime rice



smoked lamb and sweet potatoes mashed with smoked garlic butter and a roasted red pepper sauce



i am full now, gonna watch some football and catch some sleep

Looks incredible! I'm curious though - what smoke wood did you use for the cook? (I assume everything was on at the same time)

I know it goes against popular beliefs and practices but I used mesquite

I use it on pretty much everything and never had people complain about it being too strong
