Default Labor day cook - first brisket

At the beginning of summer, I made it a goal to cook a brisket before the summer was over (which means before my birthday by my definition ). Since we weren't camping this weekend and I felt comfortable enough with the Master Forge, I decided that this will be the weekend to do it.

Got myself a flat from Sam's Club. After about 9 hours on the smoker, It probed with little resistance.


Quick picture of one of the slices


Gratuitous horribly out of focus picture quickly taken because the slice was falling apart all while I was wishing I had another hand.


I'm happy with my first attempt.
