Can you age a previously frozen brisket??
Here's a question I saw posed on a facebook bbq site & I'm interested in getting some brethrenly opinions on it. Because I don't know the correct answer myself.
>>Has anyone aged a previously frozen brisket? I have a few briskets that have 20-30 days age before freezing and I was thinking about thawing them out 2 weeks prior to the next contest.<<

No, I heard in a meat science class that when meat is frozen is kills the "aging" enzymes.

As long as the cryo vac is not broken you should be fine

So what will happen when he starts to age it then? I am in the same boat, i had a brisket in the freezer and then I placed it in the fridge to thaw and age for a little before I cook it up.

Can anyone answer this question for me please?
I have a previously frozen brisket in the fridge right now and am looking to see if I just need to cook it now so I don't let it go to waste.

It won't age like it would if you did not freeze it, freezing it kills the enzymes that break the stuff down to do the "aging". If the cryo is not broken you should have no problem "keeping" it until you have time to cook, it won't "age" though.

I age all my briskets after freezing them. I haven't had an issue with them yet.
