FYI, all the pics were taken with my Iphone, no camera used other than that. Much talk about cameras lately and I wanted to try using just my phone.

Never bought skirt steak, hard to find here. How does it compare to flank? Did you marinate it?

I did marinate it in my Gamesaver quick marinate box attachment for the Foodsaver. Mixed up some Mojo and garlic with a touch of Cumin and fresh squeezed lime juice. Try asking for Flap Meat sometimes it's referred to as such.
