Default 2 Chickens and Stuffed Peppers, SundayQ -PRON Heavy

For Sunday Dinner I decided to smoke 2 Spatchcocked (Butterflied) whole chickens, with accompanying; rice, chili beans and, sharp cheddar smoked peppers. I also made a cast iron charcoal baked sweet potato muffin bread (this was a mix I picked up some where), and some brown sugar candied bacon.

I hope to add more details later, It's been a long day of cooking and I want to eat this glorious food!

I got the Trailmaster up to temp.




Kingsford and some Mesquite in the charcoal basket.



Put some bacon on while I was prepping other things, I mean why not?




Added some Pecan chunks.




Smoker is ready and chicken is about to go on.



2 Spatchcocked (butterflied) chickens, the bacon is on the right.







After about 2.5 hours.







Getting the Weber kettle started for the sweet potatoe muffin bread.



The mixture. (packaged brand name)



The cast iron "cake" pan





Mixture in and ready for the Weber.









Checking back in on the chicken.



Color is looking good.





Sweet potatoe bread looking good, nice char on the sides.







Cooked perfectly, slide right out of the pan



Golden crisp edge



And now it's candied bacon time.





Added some brown sugar.





Chicken was ready, look at those two amazing birds.







I forgot to take picture making the peppers, but starting from the bottom, rice, chili beans, hot peppers, melted extra sharp cheddar. They smoked for about 35 minutes.

Birds were on for about 4 hours total, I probably could have pulled them 15-20 mins sooner, IT was 170* in the breast.
