just a word on Visible smoke from a UDS not all White Smoke that comes out of a UDS is due to incomplete combustion your nose will tell you the truth if it smells like BBQ it is good( meat juices sending up the offering) if it smells like an ash tray then you have combustion problems (smoldering fire).

Yep. My first cook was the latter. I just had no idea what I was doing. It was smelling like that before I put any meat on.

It was much better last night, but tonight I'll either burn the middle of the top and add some wood or borrow my neighbor's chimney. I'll probably try both to see which one I prefer.
