As a fellow Texan, I am not overly fond of sweet BBQ sauces. I personally love Stubbs spicy sauce on pulled pork but as many of the previous posts show a mixture of commercial sauce with a vinegar-base Carolina recipe makes for a very interesting combo.

Heres 2 more That live in my pantry and are more of what you are looking for

Eastern N..C. Pig Juice

Ingredients
1 quart cider vinegar
1/8 cup salt
1 tablespoon cayenne pepper
1 tablespoon garlic powder
1 tablespoon milled black pepper
1 1/2 tablespoons red pepper flakes
1/2-3/4 cup light brown sugar, depending on taste
1 tablespoon hot pepper sauce

In a larger non reactive pot, heat the vinegar and the spices simmer 20 min
Remove from heat add the sugar and pepper sauce. allow to cool and bottle.

Tarheel in TX Dip

1 quart apple cider vinegar
1 (20 ounce) bottle ketchup
1/4 cup paprika
1 pound dark brown sugar
1/4 cup salt
1 tablespoon black pepper
2 tablespoons red pepper flakes
1 tablespoon garlic powder
1/4 cup Worcestershire sauce
1/2 cup lemon juice

In a large no reactive pot heat the Vinegar add all the spices and simmer 20 min.
Remove from the heat stir in the brown sugar wooster & lemon juice
Whisk in the ketchup allow to cool and jug it up.
