I've seen them used on pitmasters before. I'm curious, they don't damage the meat when you poke to lift or move the meat? What advantages do they have over a big spatula?

Like any other tool they all have their place. The only problem I have found with my BBQ hook is if you hook in to a piece of chicken to close to the edge and it is really tender the weight of the chicken can rip it off of the hook.

The hook is so sharp that it pierces the meat fast and cleanly and holds up well.
