Looks really juicy. Since you didn't have the bone to wiggle, any special tricks to determine when they were done?

Once they hit 200, I started checking every 15-20 minutes, using a old analog temp gauge for tenderness. Ended up pulling them at 205 and they were perfect.

Worked out real well. The sweetness of the apple juice worked well with the high pepper content of the Butt Rub.
