Looking good! I've got the trim from18 racks I did St Louis style last weekend. Would you mind sharing a little detail on cooking the riblets? Cut up first and braised in the pan w/ sauce????

@Dwfisk, all i did on the riblets is rub them down, threw them in the foil container with some butter and let them smoke for a few hours after that i sauced them and moved closer to the heat to let carmelize..
