We love doing breakfast pizza. I like to lightly scramble my eggs so they aren't fully set, then let them finish when the pizza is on the grill. Next to the yeast in some grocery stores is a "pizza dough yeast" it's beyond simple to use. I've made plenty of doughs from scratch, and now that is our go-to. No rest time like traditional yeast or anything. Looks like a great meal!
