Hey guys,
First time posting. I have had my UDS for a couple of months now but I live in Southeast Asia and pork spare ribs here are a bit smaller than the ones I could get back home. After trimming to a St Louis Cut the ribs clock in around 2 pounds and over all the rack is shorter. First time did a 3-2-1 and they turned to mush. Tried them again at about 2.5 smoke, 40 minutes wrapped in foil, and another hour smoke. Came out a bit too tough and dry. Any tips would be appreciated. Cheers! |
