I do have to day the backwoods cooks much faster than the WSM. Seems to me cooking at 240f on the BWS is like cooking at 275F on the WSM. Could just be me I did have many drinks in the process. 👍:)

YOU CAN NOT COOK GREAT BBQ ON A CONSISTENT BASIS BY COOKING TO AN INTERNAL TEMPERATURE OR BY TIME ( XXX MIN PER LB) YOU MUST COOK BY FEEL! For Brisket and Pork Butts it must pass the poke test(probe like soft butter in the thickest part of the Flat) Ribs pass the Bend Test, These are the only reliable methods to ensure that your cook will be a success. There is one exception to these rules and that is Poultry which must achieve an internal temp of 170 deg in the thickest part of the thigh and 165 in the breast.

I had the guru probe on the middle great set at 270F 4 hours in with no foil and ribs where over cooked. The only way I could get that cook time on the WSM is if I foiled. So I am thinking cooking on the BWS at 240f is where I need to be to fit my time line. I will be doing another cook this weekend and will see how 240f works. I will also add cooking with water it awesome I love the produced the BWS is producing. No for the brisket cooked at same temp in the BWS was done in 6 hours no foil pulled at 198f internal temp.
